From Sandra's KitchenCRANBERRY REFRIGERATOR CAKE2 cups fresh cranberries, chopped 2 cups crushed vanilla wafers 1/2 cup butter, at room temperature 1/2 cup chopped nuts Mix together the cranberries, banana and granulated sugar. Place one cup of the crushed wafers in the bottom of an 8"x8" pan. Cream the butter and confectioners sugar. Top with a layer of the cranberry/banana mixture. Whip the cream until it peaks. Serves 9 - 12.
