PUMPKIN COOKIES

Here's another fall favorite. This make 7 dozen, or you can cut the ingredients in half if you prefer a smaller batch.

2 c. sugar
2 c. shortening (like Crisco)

1, 16-oz. can pumpkin (=2 cups)
2 eggs
2 tsp. vanilla

4 c. all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ground allspice

2 c. raisins
1 c. chopped nuts (optional)

In a mixer, thoroughly cream together sugar & shortening.
Add pumpkin, eggs and vanilla; beat well.
Sift together the dry ingredients.  Add to creamed mixture; mix well.
Stir in the raisins and chopped nuts.

Drop rounded teaspoons onto greased cookie sheet about 2" apart. 
Bake at 350 for 12-15 minutes. 
Remove from baking sheet to cool. 
Frost with your favorite vanilla frosting, if desired.
