RICE AND MUSHROOMS

2-3/4 c. prepared rice
6 Tbs. salad oil
2 small cans mushrooms, drained, or package of fresh mushrooms
green onions, chopped
2 cans beef consommé (or use a "no salt" brand)
2 Tbs soy sauce.

Mix and bake covered, at 350 until liquid is absorbed (30-40 minutes).  Do not stir.
To make ahead, place dry ingredients in baking dish and add liquids just before baking.
