From Sandra's KitchenSTRAWBERRY TIRAMISUThis is a great way to use the fresh strawberries that are coming into season AND it is a low cal dessert. 1/2 cup part-skim ricotta cheese 3/4 cup thawed frozen light nondairy whipped topping 2 pints strawberries, hulled and sliced (reserve 6 whole berries for garnish) 1 (3oz) package ladyfingers, separated In a food processor combine ricotta cheese, cream cheese, confectioner sugar, and orange zest.
Puree, and transfer to medium bowl. Fold in whipped topping. In the same food processor, combine 1 cup sliced strawberries, granulated sugar, orange liquor & orange juice; puree.
Into each of 6 wine glasses spoon 1 TBSP strawberry puree.
Top each with 2 ladyfingers halves. Spoon another TBSP puree over ladyfingers. Top with half of the sliced strawberries, then half of the cheese mixture. Top with the remaining ladyfingers. Spoon on the remaining puree, berries and cheese mixture. Cover each glass with plastic wrap and refrigerate overnight.
Garnish each serving with 1 strawberry before serving. Serves 6.
